Here the short short version of how-to sync more than one Google calendar with your iPhone/iPod Touch using iCal.
Prerequisites: iCal >= Version 3.0 (i.e. MacOS >= 10.5), iOS >= 3.0.
First, follow the instructions given by Googlemail up to point 6 - but don't use the delegation tab version Google advises you to use. Instead: repeat the whole procedure for all of your Google calendars you want to sync with your i-Device using the same procedure (rename the profiles appropriately), but replace youremail@gmail.com by the ID of your Google calendar, which you can find in the "Settings" section of the Google web calendar application.
Now connect your device to your Mac, open iTunes, choose your device there, go to the "info" tab and check all the calendars you want to sync and do a sync - happy organizing.
Side note: haven't tried the direct sync, which Google seems to support, where you can directly sync your iPod touch/iPhone calendar with the Google Server and where you can also choose which calendars you want to sync: read this
